Select only the first camera in the "Camera IP" drop down, make your changes to the query for each table/gauges/graphs in that section, and that change will propagate throughout the rest of the dynamically created table/gauges/graphs.

You can find your serial number via the instructions in this thread. Enter your camera's complete CASE SENSITIVE serial number, as seen in the Hikvision SADP tool. SNMP is not very performant, so using this for monitoring generally means that the Checkmk server needs more CPU and memory per host than when working with its own agent.
However using these instead of the Checkmk agent is not recommended.

SNMP MIB Browser is a complete tool for monitoring SNMP enabled devices and servers. This dashboard works with a telegraf collector which can be found over here. ManageEngines Suite of Free Tools includes a SNMP MIB Browser which helps to Load/unload MIBs and fetch MIB data of SNMP(v1, v2c, v3) agents. The Hikvision MIBs do not support a ton of useful information, but this dashboard does display the information I was looking to monitor.
